Roofing Burns a Lot of Calories
So let’s do something about it. These grouper tacos are a Gulf Coast favorite that’s quick, bold, and perfect for summer evenings. Ready in 15 minutes and fresher than takeout –that’s how we like it!
Ingredients:
- 1 lb fresh grouper (or any white flaky fish)
- 1–2 tbsp Cajun or blackening seasoning
- 8 small corn tortillas
- 1 cup shredded slaw mix
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1 tbsp chopped fresh cilantro (optional)
Directions:
- Pat fish dry and coat both sides with seasoning.
- Heat oil in a skillet over medium-high heat. Cook fish for 3–4 minutes per side until blackened and flaky.
- Mix sour cream with lime juice to make a quick crema.
- Warm tortillas, flake fish into pieces, and assemble with slaw and crema. Top with cilantro.
- Serve with lime wedges—and maybe a watermelon mint cooler!
