Roofing Burns a Lot of Calories

So let’s do something about it. These grouper tacos are a Gulf Coast favorite that’s quick, bold, and perfect for summer evenings. Ready in 15 minutes and fresher than takeout –that’s how we like it!

Ingredients:

  • 1 lb fresh grouper (or any white flaky fish)
  • 1–2 tbsp Cajun or blackening seasoning
  • 8 small corn tortillas
  • 1 cup shredded slaw mix
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh cilantro (optional)

 

Directions:

  1. Pat fish dry and coat both sides with seasoning.
  2. Heat oil in a skillet over medium-high heat. Cook fish for 3–4 minutes per side until blackened and flaky.
  3. Mix sour cream with lime juice to make a quick crema.
  4. Warm tortillas, flake fish into pieces, and assemble with slaw and crema. Top with cilantro.
  5. Serve with lime wedges—and maybe a watermelon mint cooler!
